Definitely Uncharted 2! It's a third person action-adventure/shooter game. It's extremely fun. The single player campaign is mindblowing, and the online multiplayer is fucking addicting. You can wait for the third, if you want, but it's coming out on November, which is almost a year away from now, so I'd stick with the second.
Then, if you like arcade-ish racing games, I'd recommend Need for Speed: Hot Pursuit. It's not a PS3 exclusive, but it's definitely worth the purchase.
On the other hand, if you prefer driving simulators, then Gran Turismo 5 is for you.
On January 18th, one of the best games ever is coming out too. It's called LittleBigPlanet 2. Now, it's obviously a sequel. The point, as they say, is to 'play, create, and share.' You can play many fun levels created by the developers and the community. All the levels by the developers are fully designed with the tools they give you. So you can create ANYTHING you want. Very complex levels with customized music and cutscenes. First game was limited to platforming, but this one will also feature racing, RPGs, FPSs, and many many more genres. Of course, after you create your levels, you can post them online and people around the world get to try them and give you some feedback.
So, what else is there... Um... I heard God of War III is amazing, so maybe you should check it out, but I have only watched people play it, so I can't tell.
Oh, Heavy Rain, also, looks pretty great. It's basically an interactive movie that'll go on no matter what. So you have to be wise when doing your choices, because they'll directly affect what will happen next.
And, of course, some other games like Killzone 2, Ratchet and Clank, and Metal Gear Solid 4 can make it to the list, depending on your tastes.
That's pretty much all I have to recommend, no specific order, really. All depends on what you want to play.
By the way, are we friends on PSN? I can't recall adding you. If not, what's your ID?

Thanks, do have to play the first Uncharted to really understand the second one? And my ID is just my username here except no space between spidey and 1923.

I'll add you as soon as I log on. As for your question, well, not really. The second takes place one year or so after the first, and, well, it's a whole different story... It's told in a way that even if you don't know the characters in the first place, you get to know them, as the story progresses. However, there are some easter eggs that you may miss if you don't go through the first. I would actually, to an extent, recommend playing the first before because it is a pretty good game and a very good practice for the second. And there's no point going back to it once you went through Uncharted 2 since the latter is at least ten times better. Plus, I believe the first one is really cheap now. So, I'd put it on the very bottom of my list. It's not necessary. Only if you get bored and have money to spend, I'd say go for it.
